Holiday Finger Food: How to Use Christmas Remains into New Year’s Eve Appetizers

Party snacks needn't be elaborate, so New Year's presents a great chance to use up what's left. The key rule is to keep things to just one bite—guests don't want to manoeuvre a fork. People just want a comforting taste of comfort food with a decadent twist.
Should you possess a bit of cured fish left, place it on mini pancakes and top it with lumpfish caviar. Small patties are also just the ticket: Whether you've got leftover smoked haddock or hot smoked salmon, fold it through creamy potatoes, combine with dill, lemon, and caramelized onions, then roll in panko and fry until golden.
You could also have a ball with croquetas. Make the bechamel a few days ahead, then use leftover ham, chicken, or foraged fungi for the interior. Whizz stale bread into crumbs to cover them, then fry. Sausage roll fillings are another natural home for those crumbs, or use them as a coating for bite-sized chicken. Seasoning-wise, all you need a bit of citrus zest and thyme, and they'll sing so much more. Incidentally, croissants make superb crumbs, too.
One favourite thing at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Place some ham and turkey in an sealed tub and freeze. While you're at it, set aside some berry relish and honey ham glaze in the refrigerator. When needed, thaw the meat, then place it in a preheated oven with the saved glaze for a brief period. Cool and cut into thin pieces, then arrange on top of some sourdough and assemble mini sandwiches with lots of tangy sauce. Slice into bite-sized pieces for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a zingy salad. You often have a bit of turkey leg left over, and it's perfect for something punchy. Pull the meat, then fry it slowly in a pan, and mix with remaining sauce loosened with citrus juice, a spoonful of soy and a little chilli oil. Finish with fresh herbs and some sliced spring onion, and present in little gem leaves.
Transforming Leftover Vegetables
Vegetables, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Mix all your remaining vegetables with herbs, then add salt and pepper and add a binding agent. Stamp out portions to roughly the size of small rounds, then keep in the icebox. Reheat in a hot oven for a few minutes and finish with whatever you like—perhaps roast beef and sharp horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
